Ingredients
  

1 cup rolled oats

½ cup natural almond butter (or any nut butter of your choice)

¼ cup honey or maple syrup

½ cup finely chopped dried apricots

¼ cup shredded unsweetened coconut

¼ cup mini dark chocolate chips (or cacao nibs)

2 tablespoons chia seeds

1 teaspoon vanilla extract

Pinch of sea salt

Optional: ¼ cup chopped nuts (like pistachios or walnuts)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped dried apricots, shredded coconut, mini dark chocolate chips, chia seeds, and a pinch of sea salt. If using, add the chopped nuts for an extra crunch.

    Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

      Combine Mixtures: Pour the wet mixture into the dry ingredients bowl. Using a spatula or your hands, mix everything together until evenly combined. If the mixture feels too dry, add a little more nut butter or honey.
