1 cup unsweetened shredded coconut, plus extra for rolling

1/2 cup rolled oats

1/2 cup almond flour

1/4 cup almond butter (or peanut butter)

1 tsp vanilla extract

1/2 tsp ground cinnamon

Pinch of salt

2 tbsp maple syrup (optional, for added sweetness)

Prepare the Dates: Start by placing the pitted Medjool dates in a food processor. Pulse them until they form a sticky paste. If necessary, add a splash of water to make the blending easier.

    Mix Ingredients: To the food processor with the date paste, add the unsweetened shredded coconut, rolled oats, almond flour, almond butter, vanilla extract, ground cinnamon, and a pinch of salt. If you want extra sweetness, drizzle in the maple syrup.

      Blend to Combine: Process the mixture until it’s well combined and starts to come together as a dough-like consistency. You may need to scrape down the sides of the bowl occasionally.
