1 cup rolled oats

1 cup shredded carrots (about 2 medium carrots)

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/4 cup shredded coconut (unsweetened)

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup walnuts, chopped (optional)

1/4 cup raisins or dried cranberries

Pinch of salt

Instructions
 

Prep the Carrots: Start by washing and peeling the carrots. Grate them using a fine grater or a food processor until you have about 1 cup of shredded carrots. Set aside.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, ground cinnamon, nutmeg, and a pinch of salt. If you’re adding walnuts and dried fruit, mix those in as well.

      Combine Wet Ingredients: In a separate bowl, mix together the almond butter (or peanut butter) and honey (or maple syrup) until smooth and well combined.

        Combine Mixtures: Pour the wet mixture into the dry mixture. Add the shredded carrots and mix thoroughly until all ingredients are evenly incorporated. The mixture should be sticky but manageable.

          Form Energy Balls: Use your hands to roll the mixture into small balls about 1 inch in diameter. If the mixture is too sticky, you can dampen your hands slightly or refrigerate it for 10-15 minutes to make rolling easier.

            Chill and Set: Place the formed energy balls on a parchment-lined baking sheet or plate. Refrigerate them for at least 30 minutes to allow them to set.
