Neapolitan Chicken Skillet

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), sliced

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup marinara sauce

½ cup fresh basil leaves, chopped

½ cup mozzarella cheese, shredded

Grated Parmesan cheese for serving

Instructions
 

Prepare the chicken: Season the chicken breasts with Italian seasoning, salt, and pepper on both sides.

    Sear the chicken: In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, until they are golden brown and cooked through. Remove from skillet and set aside.

      Sauté the vegetables: In the same skillet, reduce heat to medium and add the onion and bell pepper. Sauté until soft, approximately 4-5 minutes. Stir in the garlic and cook for an additional minute until fragrant.

        Add the tomatoes and spinach: Incorporate the cherry tomatoes and baby spinach, stirring until the spinach wilts and the tomatoes soften, about 2-3 minutes.

          Combine with sauce: Pour in the marinara sauce, stirring everything to combine. Allow the mixture to simmer for 2-3 minutes.

            Return chicken to the skillet: Place the cooked chicken breasts back into the skillet, spooning some sauce over them. Sprinkle the mozzarella cheese on top.

              Melt the cheese: Cover the skillet and let it cook for another 2-3 minutes until the cheese has melted.

                Garnish and serve: Remove from heat, sprinkle with chopped basil and additional Parmesan cheese if desired. Serve warm, paired with pasta or crusty bread.
