4 medium zucchini, grated

6 large eggs

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/4 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

1/4 cup finely chopped green onions

1 French baguette or whole-grain bread, sliced into 1/2-inch thick pieces

Olive oil, for brushing

Fresh basil leaves, for garnish

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.

    Prepare the zucchini: In a colander, sprinkle the grated zucchini lightly with salt and let it drain for about 10-15 minutes. This will help reduce excess moisture. Afterward, squeeze the zucchini with your hands to remove as much water as possible.

      Make the egg mixture: In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, oregano, and red pepper flakes. Stir in the squeezed zucchini, mozzarella cheese, Parmesan cheese, and green onions until well combined.

        Toast the bread: Arrange the bread slices on the prepared baking sheet. Brush each slice lightly with olive oil on both sides. Bake in the preheated oven for about 8-10 minutes, or until they are lightly golden and crisp.
