Mini Zucchini Cheddar Quiche Bites

1 medium zucchini, grated and excess moisture squeezed out

1 cup shredded sharp cheddar cheese

3 large eggs

1/2 cup milk

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon dried thyme

1/2 cup finely chopped onion

1/4 cup diced bell pepper (optional)

1 tablespoon olive oil (for sautéing)

Cooking spray or additional oil for greasing the muffin tin

Instructions
 

Preheat Your Oven: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray or a brush of olive oil.

    Sauté Vegetables: In a skillet over medium heat, add olive oil. Once hot, add the chopped onion and bell pepper (if using). Sauté for about 3-4 minutes until softened. Add the grated zucchini and sauté for another 2-3 minutes until the zucchini is tender. Remove from heat and let cool slightly.

      Prepare the Quiche Mixture: In a large mixing bowl, whisk together the eggs, milk, flour, baking powder, salt, pepper, garlic powder, and dried thyme until smooth.

        Combine Ingredients: Stir the sautéed vegetables into the egg mixture. Then, fold in the shredded cheddar cheese until evenly combined.

          Fill Muffin Tin: Evenly distribute the quiche mixture into the greased muffin tin, filling each cup about 3/4 full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

              Cool and Serve: Remove from the oven and let the quiche bites cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or at room temperature. Enjoy!
