1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon cayenne pepper (optional for heat)

Vegetable oil for frying

12 mini waffle halves (store-bought or homemade)

Maple syrup for drizzling

2 tablespoons butter, melted

½ cup shredded lettuce

½ cup sliced pickles

Instructions
 

Marinate the Chicken: In a medium bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or preferably overnight.

    Prepare for Frying: In another bowl, whisk together the flour, baking powder, and cayenne pepper (if using). Heat oil in a deep skillet over medium heat. The oil should be about 350°F (175°C) for frying.

      Fry the Chicken: Remove the chicken thighs from the buttermilk marinade (discard the marinade) and dredge them in the flour mixture, ensuring they are fully coated. Carefully place the chicken in the hot oil, frying in batches to avoid overcrowding. Fry each side for about 4–5 minutes, or until golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove and place on a paper towel-lined platter to absorb excess oil.

        Toast the Waffles: While the chicken is frying, if using homemade waffles, prepare them according to your recipe. If using store-bought, toast the mini waffles in a toaster or on a griddle until they are golden and crispy.

          Assemble the Sliders: Brush the tops of each waffle with melted butter. On each bottom waffle half, place a piece of fried chicken, followed by shredded lettuce and a few pickle slices. Drizzle with maple syrup for a touch of sweetness, then top with the waffle half to complete the slider.

            Serve: Arrange sliders on a platter and serve warm. Enjoy with extra syrup for dipping if desired!
