Ingredients
  

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 zucchini, diced

1 bell pepper (any color), diced

1 cup mushrooms, sliced

1 cup spinach, chopped

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

8 lasagna noodles, broken into pieces

1 ½ cups marinara sauce

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup parmesan cheese, grated

Fresh basil for garnish (optional)

Instructions
 

Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it's translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add the Remaining Vegetables: Toss in the diced zucchini, bell pepper, and mushrooms. Cook for about 5-7 minutes until the veggies have softened. Add the chopped spinach and stir until it wilts.

      Season: Sprinkle in the dried oregano and basil, and season with salt and pepper to taste. Mix well to combine.

        Incorporate the Noodles: Add the broken lasagna pieces and marinara sauce to the skillet, stirring to ensure the noodles are evenly coated with the sauce and combined with the veggie mixture. If necessary, add a splash of water to help the noodles cook evenly.

          Layer the Cheeses: Spoon the ricotta cheese over the pasta. Sprinkle half of the mozzarella cheese on top, then top with the remaining mozzarella and the grated parmesan cheese.

            Cook: Cover the skillet with a lid and let it simmer on low heat for about 15-20 minutes, or until the noodles are tender and the cheese has melted. Remove the lid for the last 5 minutes for a bubbly, golden crust.
