1 pound ground turkey

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 packet taco seasoning (or homemade mix with chili powder, cumin, paprika, and salt)

1 cup diced tomatoes (canned or fresh)

1/2 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

Salt and pepper, to taste

1 head of romaine or butter lettuce, leaves separated

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it turns translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    Cook the Turkey: Add the ground turkey to the skillet. Break it apart with a spatula and cook until it’s no longer pink, about 5-7 minutes. Drain any excess fat.

      Season It Up: Stir in the taco seasoning, diced tomatoes, black beans, and corn. Mix everything together well and let it simmer for about 5-7 minutes to allow the flavors to meld. Season with salt and pepper to taste.

        Prepare the Lettuce Cups: While the turkey mixture is simmering, wash the lettuce leaves and pat them dry carefully. Choose the largest leaves to serve as cups.

          Assemble the Cups: Spoon the turkey mixture into each lettuce leaf, making sure not to overfill. Top each cup with diced avocado, a sprinkle of shredded cheese, and a few cilantro leaves.
