4 mini whole wheat pita pockets

1 cup baby spinach leaves

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/2 red bell pepper, diced

1/2 cup hummus (store-bought or homemade)

Fresh parsley for garnish (optional)
