Ingredients

1 can (5 oz) tuna, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 teaspoon Dijon mustard

1 teaspoon lemon juice

1 celery stalk, finely chopped

1 green onion, finely chopped

Salt and pepper, to taste

1 teaspoon dried dill (optional)

4 slices of whole grain bread

Olive oil, for brushing

Fresh parsley or dill, for garnish

Instructions

Make the Tuna Salad: In a medium bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.

Add Crunch: Stir in the finely chopped celery and green onion. Season with salt, pepper, and dried dill (if using). Taste and adjust seasoning as needed.

Prepare the Bread: Preheat your oven to 375°F (190°C). Use a round cookie cutter or a glass to cut circles from each slice of whole grain bread. Aim for about 2 inches in diameter.

Toast the Bread: Brush both sides of each bread circle lightly with olive oil. Place them on a baking sheet in a single layer. Bake in the preheated oven for about 8-10 minutes or until they are golden and crispy.

Assemble the Toasts: Once the bread is toasted and crispy, remove it from the oven and let it cool slightly. Top each toast circle with a generous spoonful of the tuna salad mixture.

Garnish and Serve: Garnish each mini tuna toast with a sprinkle of fresh parsley or dill for added flavor and a touch of elegance. Serve immediately as a delightful appetizer or snack.
