2 large cucumbers

1 can (5 oz) of tuna in water, drained

3 tablespoons Greek yogurt or mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 celery stalk, finely diced

1 green onion, finely sliced

Salt and pepper to taste

Fresh dill or parsley for garnish

Optional toppings: sliced olives, cherry tomatoes, or avocado slices

Instructions
 

Prep the Cucumbers: Wash and dry the cucumbers. Cut them in half lengthwise and scoop out the seeds using a small spoon or melon baller to create 'boats'. Be careful not to pierce the sides. Set aside.

    Make the Tuna Filling: In a medium mixing bowl, combine the drained tuna, Greek yogurt (or mayonnaise), Dijon mustard, lemon juice, diced celery, and green onion. Mix well until all ingredients are incorporated. Season with salt and pepper to taste.
