1 package of puff pastry (2 sheets, thawed)

1 lb ground beef or turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (about 1 oz)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (optional)

1 egg (for egg wash)

1 teaspoon olive oil

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Cook the Filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and garlic, cooking until they are soft and fragrant, about 3-4 minutes. Add the ground beef or turkey, breaking it apart with a spatula. Season with salt and pepper and cook until browned and cooked through, about 6-8 minutes.

      Add Taco Flavor: Stir in the taco seasoning, black beans, and corn, mixing well. Cook for another 2-3 minutes until everything is heated through. Remove from heat and let it cool slightly.

        Prepare the Puff Pastry: On a lightly floured surface, unfold the thawed puff pastry sheets. Roll them out slightly to ensure an even thickness. Cut each sheet into 4 squares (8 total squares).
