Mini Sweet Potato Chorizo Frittata Cups

1 medium sweet potato, peeled and diced into small cubes

4 oz chorizo, casing removed and crumbled

6 large eggs

¼ cup milk

1 cup fresh spinach, chopped

½ cup shredded cheddar cheese

Salt and pepper to taste

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a muffin tin by lightly greasing it with cooking spray or olive oil.

    Cook the Sweet Potato and Chorizo: In a medium skillet over medium heat, add the olive oil. Once hot, add the diced sweet potatoes. Cook for about 5-7 minutes, stirring occasionally, until they start to soften. Add the crumbled chorizo to the skillet, and continue cooking for another 5-7 minutes until the chorizo is browned and the sweet potatoes are tender. Stir in the garlic powder, salt, and pepper. Remove from heat.
