Mini Spaghetti Taco Bites

8 oz spaghetti

1 lb ground beef or turkey

1 packet taco seasoning

1 cup marinara sauce

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup sour cream

12 taco shells (mini or cut in half)

Fresh cilantro, for garnish (optional)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, then drain and set aside.

    Prepare the Meat: In a large skillet over medium heat, add the ground beef or turkey. Cook until browned and no longer pink, breaking it up into small pieces with a spatula. Drain any excess fat.

      Season the Meat: Add the taco seasoning to the skillet, along with 1/4 cup of water. Stir to combine and simmer for about 5 minutes, until the mixture thickens slightly.

        Combine Spaghetti & Marinara: Add the cooked spaghetti to the skillet with the taco meat. Pour in the marinara sauce and mix well until the spaghetti is evenly coated.

          Preheat Oven: Preheat your oven to 350°F (175°C).

            Assemble Taco Bites: Place the mini taco shells on a baking sheet. Spoon the spaghetti mixture into each shell, filling them generously.

              Add Cheese: Sprinkle shredded cheddar cheese over the top of each filled taco shell.

                Bake: Place the baking sheet in the oven and bake for 10-12 minutes or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove from the oven and top each taco bite with shredded lettuce, diced tomatoes, and a dollop of sour cream. Garnish with fresh cilantro if desired.
