2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon garlic powder

½ cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

¾ cup milk

2 tablespoons Dijon mustard (optional for extra flavor)

Fresh chives or parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

    Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until it's browned and fully cooked, about 5-7 minutes. Break it into small pieces as it cooks. Drain excess fat and set aside to cool slightly.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, and garlic powder.

        Cut in Butter: Add the cubed cold butter to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

          Add Cheese and Sausage: Stir in the shredded cheddar cheese and the cooked sausage, mixing until evenly distributed.

            Add Milk: Pour in the milk (and Dijon mustard, if using) and stir until just combined. Be careful not to overmix; the dough should be slightly sticky.

              Form Biscuits: Turn the dough onto a floured surface and gently pat it to a thickness of about ¾ inch. Use a round biscuit cutter or a glass to cut out mini biscuits (around 2 inches in diameter) and place them on the prepared baking sheet. Gather the scraps and re-pat to cut out more biscuits.
