2 medium zucchinis

1 cup cooked quinoa

1/2 cup cherry tomatoes, diced

1/4 cup bell pepper, finely chopped (any color)

1/4 cup red onion, finely diced

1/2 cup shredded mozzarella cheese (or vegan cheese for a plant-based option)

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Balsamic glaze for drizzling (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis into 1-inch thick rounds. Using a small spoon or a melon baller, carefully scoop out the center of each round to create a ring, leaving about 1/4 inch of flesh around the edge. Arrange the zucchini rings on a baking sheet lined with parchment paper.

    Prepare the Filling: In a large mixing bowl, combine the cooked quinoa, diced cherry tomatoes, bell pepper, red onion, mozzarella cheese, parsley, olive oil, garlic powder, oregano, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
