Mini Pancake Sandwiches with Apple Butter

1 cup all-purpose flour

2 tbsp sugar

1 tbsp baking powder

1/2 tsp salt

1 cup milk (whole or buttermilk)

1 large egg

2 tbsp melted butter (plus more for the skillet)

1/2 tsp vanilla extract

Apple butter (store-bought or homemade)

A sprinkle of cinnamon (optional)

Optional toppings: sliced apples, chopped nuts, whipped cream

Instructions
 

Prepare the Batter: In a large bowl, whisk together the flour, sugar, baking powder, and salt. In another bowl, mix the milk, egg, melted butter, and vanilla until well combined. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

    Heat the Skillet: In a non-stick skillet or griddle, heat a little butter over medium heat until melted. You can test if it's ready by dropping a small amount of batter onto the skillet – it should sizzle.

      Cook the Pancakes: For mini pancakes, pour 1-2 tablespoons of batter onto the skillet. Cook until bubbles form on the surface (about 1-2 minutes), then flip and cook on the other side until golden brown (another 1-2 minutes). Continue the process until all the batter is cooked, adding more butter to the skillet as needed.

        Assemble the Sandwiches: Take two mini pancakes and spread a generous layer of apple butter in between them. If desired, add a sprinkle of cinnamon, some thinly sliced apples or nuts for added texture.

          Serve and Enjoy: You can serve the mini pancake sandwiches warm or at room temperature. Optionally, drizzle some more apple butter or maple syrup on top and finish with whipped cream for an indulgent twist.
