For the Crust:

1 cup chocolate sandwich cookies, crushed

4 tablespoons unsalted butter, melted

2 tablespoons sugar

For the Filling:

2 cups mint chocolate chip ice cream (or your favorite flavor)

1/2 cup whipped cream (store-bought or homemade)

For the Topping:

1/4 cup mini chocolate chips

Fresh mint leaves, for garnish

Chocolate syrup, for drizzling

Instructions
 

Prepare the Crust:

    - In a medium mixing bowl, combine the crushed chocolate sandwich cookies, melted butter, and sugar. Mix until the mixture resembles wet sand.

      - Press the cookie mixture evenly into the bottom and slightly up the sides of a muffin tin or mini tartlet pans. Use your fingers or the back of a measuring spoon to compact it well.

        - Place the crust in the freezer for about 15 minutes to set.

          Fill with Ice Cream:

            - Remove the crusts from the freezer. Let the mint chocolate chip ice cream sit at room temperature for about 5 minutes to soften slightly.

              - Using a small ice cream scoop or a spoon, fill each crust with the softened ice cream, pressing down gently to create an even surface. If desired, top each pie with a dollop of whipped cream.

                Chill:

                  - Place the mini pies back in the freezer for at least 2 hours or until fully set.

                    Decorate:

                      - Once set, remove the mini ice cream pies from the freezer. Before serving, sprinkle each pie with mini chocolate chips, garnish with fresh mint leaves, and drizzle chocolate syrup on top.

                        Serve:
