2 medium-sized eggplants

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Olive oil for drizzling

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Eggplants: Wash the eggplants and slice them into 1/2-inch thick rounds. Sprinkle both sides with salt and let them sit for about 15-20 minutes. This process helps to draw out excess moisture and makes the eggplants firmer when baked.

      Rinse and Dry: After the eggplants have sat, rinse off the salt under cold water and pat them dry with paper towels.

        Arrange on a Baking Sheet: Place the eggplant slices on a baking sheet lined with parchment paper. Drizzle a little olive oil over each piece, and season them with pepper, garlic powder, and oregano.

          Bake the Eggplant Slices: Bake the eggplant slices in the preheated oven for 15 minutes, flipping them halfway through. They should be tender and slightly golden.

            Add Sauce and Cheese: Remove the eggplants from the oven and spoon a small amount of marinara sauce onto each piece. Top with shredded mozzarella and a sprinkle of Parmesan cheese. If you like a bit of heat, add a pinch of red pepper flakes on top.
