2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ teaspoon black pepper

½ cup unsalted butter, cold and cubed

1 cup shredded cheddar cheese

4 large eggs

½ cup crumbled feta cheese

½ cup whole milk

1 tablespoon fresh chives, chopped (optional)

1 tablespoon olive oil for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a muffin tin with olive oil or use non-stick spray.

    Make the Biscuit Dough: In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper. Add the cold cubed butter and use a pastry cutter or your fingers to incorporate it until the mixture resembles coarse crumbs.

      Add Cheese: Stir in the shredded cheddar cheese until evenly distributed in the mixture.

        Prepare Egg Mixture: In a separate bowl, beat the eggs with milk, then fold in the crumbled feta and chopped chives (if using).

          Combine Mixtures: Gradually pour the egg mixture into the biscuit dough and stir until just combined. Be careful not to overmix; the dough should be slightly sticky.

            Shape the Bombs: Scoop a tablespoon of the dough and shape it into a ball. Gently press down to create a small disc, then place a teaspoon of the egg and feta mixture in the center. Fold the edges over the filling and roll it into a ball again.

              Fill Muffin Tin: Place each filled dough ball into the greased muffin tin. Repeat with the remaining dough and filling.

                Bake: Bake in the preheated oven for 15-20 minutes or until golden brown and puffed up.
