2 medium zucchini, grated

1 cup panko breadcrumbs (or regular breadcrumbs)

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup marinara sauce (for serving)

Slider buns (mini or regular-sized)

Olive oil spray (for frying)

Fresh basil leaves (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: In a bowl, grate the zucchini and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. Afterward, squeeze the grated zucchini in a clean kitchen towel to remove as much moisture as possible.

      Mix Ingredients: In a large bowl, combine the squeezed zucchini, panko breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix until well combined and the mixture holds together when formed into a patty.

        Form Sliders: Using your hands, form the mixture into small patties—about 2 inches in diameter. Place them on the prepared baking sheet.

          Bake the Sliders: Lightly spray the tops of the patties with olive oil spray. Bake in the preheated oven for 20-25 minutes or until they are golden brown and crispy, flipping them halfway through.
