Mini Chicken Pesto Wonton Cups

1 package (50 count) wonton wrappers

1 cup cooked chicken, shredded or diced

1/2 cup pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Wonton Wrappers: Lightly grease a mini muffin tin with olive oil. Gently press a wonton wrapper into each muffin cup, creating a little cup shape. You can use a second wonton wrapper to create double layers for extra sturdiness if desired.

      Mix the Filling: In a large bowl, combine the cooked chicken, pesto, salt, and pepper. Mix until the chicken is well coated.

        Assemble the Cups: Spoon the chicken-pesto mixture evenly into each wonton cup, filling them nearly to the top (but not overflowing).

          Add the Toppings: Sprinkle shredded mozzarella cheese on top of each filled wonton cup. Add a few halved cherry tomatoes on top of the cheese for a pop of color and flavor.

            Bake: Bake in the preheated oven for about 12-15 minutes, or until the wonton cups are golden brown and the cheese is bubbly. Keep an eye on them to avoid over-browning.
