For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

2 tablespoons plain Greek yogurt

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lemon

For the Tzatziki Sauce:

1 cup plain Greek yogurt

½ cucumber, grated and drained

1 clove garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill, chopped

1 tablespoon lemon juice

Salt and pepper to taste

For the Sliders:

12 mini pita breads

1 cup cherry tomatoes, halved

1 cup shredded lettuce

Feta cheese, crumbled (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine olive oil, Greek yogurt, minced garlic, oregano, cumin, smoked paprika, salt, pepper, and lemon juice. Add the chicken thighs and coat them well in the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Tzatziki Sauce: In a medium bowl, mix the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, salt, and pepper. Stir until well combined. Chill in the refrigerator until ready to serve.

      Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting any excess drip off, and grill for about 5-7 minutes on each side, or until cooked through and the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing it into small strips.

        Assemble the Sliders: Take the mini pita breads and warm them briefly in a dry skillet or microwave. Place a few slices of grilled chicken inside each pita. Top with shredded lettuce, halved cherry tomatoes, and a generous dollop of tzatziki sauce. If desired, sprinkle feta cheese and fresh parsley on top.
