1 lb boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 bell pepper (any color), sliced

1 small onion, sliced

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup fresh cilantro, chopped

12 mini cones or tortilla cups (store-bought or homemade)

Lime wedges, for serving

Instructions
 

Prepare the Chicken: In a medium bowl, mix the diced chicken with olive oil, cumin, chili powder, smoked paprika, salt, and pepper. Ensure the chicken is evenly coated in the spices.

    Cook the Chicken: Heat a large skillet over medium heat. Add the seasoned chicken and cook for about 5-7 minutes, or until the chicken is cooked through and no longer pink. Remove the chicken from the skillet and set aside.

      Sauté the Veggies: In the same skillet, add the sliced onion and bell pepper. Sauté for about 5 minutes, or until softened and slightly caramelized.

        Combine: Add the cooked chicken back to the skillet with the sautéed vegetables. Stir well and let cook together for an additional 2-3 minutes to combine the flavors. Remove from heat.

          Assemble the Taco Cones: If using store-bought mini cones, place them upright on a serving platter. If using tortilla cups, gently press them into a muffin tin to hold their shape. Fill each cone or cup with a generous spoonful of the chicken and veggie mixture.

            Add Toppings: Sprinkle shredded cheddar cheese on top of each filled cone. Drizzle with sour cream and garnish with fresh cilantro.
