Mini Cheddar Jalapeño Rice Fritters

2 cups cooked rice (preferably short-grain or jasmine)

1 cup shredded sharp cheddar cheese

1-2 fresh jalapeños, finely diced (seeds removed for less heat)

1/4 cup green onions, chopped

1/2 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

Oil for frying (canola or vegetable oil)

Optional: sour cream or ranch dressing for dipping

Instructions
 

In a large mixing bowl, combine the cooked rice, shredded cheddar cheese, diced jalapeños, and chopped green onions.

    In a separate bowl, whisk together the flour, eggs, garlic powder, onion powder, paprika, salt, and pepper until smooth.

      Gradually add the flour mixture to the rice mixture, stirring until everything is well combined. The mixture should be sticky and hold together. If it's too dry, add a splash of water; if too wet, sprinkle a bit more flour.

        Heat about 1/2 inch of oil in a skillet over medium heat.

          Once the oil is hot, use a tablespoon or small ice cream scoop to form and drop small rounds of the rice mixture into the oil. Do not overcrowd the skillet; fry in batches.

            Cook for 2-3 minutes on each side or until golden brown and crispy. Remove from the skillet and place on paper towels to drain excess oil.

              Serve warm with a side of sour cream or ranch dressing for dipping.
