8 small corn tortillas

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

4 large eggs

1/4 cup milk

Salt and pepper, to taste

1 ripe avocado, diced

1 medium tomato, diced

1/4 cup fresh cilantro, chopped

1 jalapeño, sliced (optional)

Sour cream, for topping (optional)

Lime wedges, for serving

Preheat the oven to 375°F (190°C). Lightly grease a muffin tin with cooking spray.

    Shape the tortillas: Using a cookie cutter, cut each corn tortilla into a circular shape that fits snugly into the muffin tin. Gently press each tortilla into a muffin cup to form a bowl shape.

      Add cheese and beans: Sprinkle about a tablespoon of shredded cheddar cheese and a tablespoon of black beans into the bottom of each tortilla cup.
