4 small corn tostadas

1 cup diced potatoes (Russet or Yukon Gold)

1/2 cup diced bell pepper (red, yellow, or green)

1/2 cup diced onion

1/2 cup cooked and crumbled breakfast sausage (or turkey sausage)

4 large eggs

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

Salt and pepper to taste

1/2 cup shredded cheddar cheese

1 avocado, sliced

Fresh cilantro, for garnish

Hot sauce (optional)

Instructions
 

Prepare the Potatoes: In a medium pot, boil the diced potatoes in salted water until just tender, about 10 minutes. Drain and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add a splash of olive oil. Sauté the onions and bell peppers until softened, about 3-4 minutes.

      Add Sausage and Potatoes: Add the crumbled breakfast sausage and the parboiled potatoes to the skillet. Sprinkle with smoked paprika, garlic powder, salt, and pepper. Cook for another 5-7 minutes until everything is crispy and well combined.

        Cook the Eggs: In a separate non-stick skillet, cook the eggs over easy or scrambled, depending on your preference. Season with a little salt and pepper.
