Mini Breakfast Biscuit Bomb Bites

Ingredients
  

1 can (8 oz) refrigerated biscuit dough

1 cup breakfast sausage, cooked and crumbled

1 cup shredded cheddar cheese

4 large eggs, scrambled

1/4 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 tablespoon fresh chives, chopped (optional)

Cooking spray or butter, for greasing

1 tablespoon melted butter (for brushing)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray or butter.

    Prepare Biscuit Dough: Open the can of biscuit dough and separate it into individual biscuits. Flatten each biscuit slightly with your hands or a rolling pin so they can easily wrap around the filling.

      Cook Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked (about 5-7 minutes). Remove from heat and let cool slightly.

        Scramble Eggs: In a bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper. Pour into a skillet over medium heat and scramble until fully cooked. Remove from heat and let cool.

          Assemble the Bomb Bites: Take a flattened biscuit and place a small spoonful of crumbled sausage, scrambled eggs, and a tablespoon of shredded cheddar cheese in the center. Carefully fold the edges of the biscuit over the filling, pinching to seal it well.

            Place in Muffin Tin: Gently place the filled biscuit balls seam side down in the greased mini muffin tin. Continue with the remaining biscuit dough until all filling is used.

              Brush with Butter: Brush each biscuit bomb lightly with melted butter to enhance browning.

                Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuit bombs are golden brown and puffed up.
