Ingredients

1 (20 oz) can young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 cup BBQ sauce (your favorite brand or homemade)

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper, to taste

12 small slider buns or mini corn tortillas

1 cup shredded green cabbage

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Jackfruit:

    - Start by shredding the drained jackfruit with your hands or forks to create a pulled texture. Set aside.

      Sauté Vegetables:

        - In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and continue to sauté for another 1-2 minutes until fragrant.

          Cook the Jackfruit:

            - Add the shredded jackfruit to the skillet. Stir in the smoked paprika, cumin, salt, and pepper. Cook for about 5 minutes, allowing the jackfruit to absorb the flavors.

              Add BBQ Sauce:

                - Pour in the BBQ sauce and stir well to coat the jackfruit. Lower the heat and let it simmer for about 10-15 minutes, occasionally stirring, until the jackfruit is cooked through and tender.

                  Prepare the Slider Buns:

                    - While the jackfruit is simmering, lightly toast the slider buns in another skillet or your toaster until golden brown.

                      Assemble the Sliders:

                        - Once the jackfruit mixture is ready, spoon a generous amount onto the bottom half of each slider bun. Top with a handful of shredded cabbage, a few slices of avocado, and a sprinkle of fresh cilantro.

                          Serve:

                            - Place the top half of the slider bun on each assembled taco slider. Serve immediately with lime wedges on the side for extra zest!
