1 medium head of cauliflower (about 2-3 cups riced)

1 cup shredded mozzarella cheese (or dairy-free alternative)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

1 large egg (or flax egg for a vegan option)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon olive oil (for greasing)

For the BBQ Filling:

1 cup cooked and shredded chicken (or jackfruit for a vegan option)

1/2 cup barbecue sauce (store-bought or homemade)

1/4 cup thinly sliced red onion

1/4 cup sliced pickles (optional)

Fresh cilantro or parsley for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: Remove the leaves and stem from the cauliflower and cut it into chunks. Steam the cauliflower until tender (about 5-7 minutes). Once cooked, allow it to cool slightly and then rice the cauliflower using a food processor or grater.

      Mix Cauliflower Mixture: In a large mixing bowl, combine the riced cauliflower, mozzarella, Parmesan, egg (or flax egg), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

        Form Slider Buns: Using your hands, form small bun shapes (about 2-3 inches in diameter) from the mixture and place them on the prepared baking sheet. Brush tops lightly with olive oil for extra crispiness.

          Bake the Buns: Bake in the preheated oven for 25-30 minutes, or until the buns are golden and firm to the touch. Allow them to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
