Ingredients

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1/2 cup shredded sharp cheddar cheese

1/2 cup milk

6 large eggs

6 strips of bacon, cooked and crumbled

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Cooking spray or additional butter for greasing

Instructions

Prepare the Biscuit Dough:

    - Preheat your oven to 450°F (232°C).

      - In a large bowl, mix together the all-purpose flour, baking powder, and salt.

        - Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

          - Stir in the shredded cheddar cheese.

            - Gradually add the milk and mix until just combined. Do not overwork the dough.

              Shape the Biscuits:

                - Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle about 1-inch thick.

                  - Cut out small circles using a biscuit cutter or a glass, about 2 inches in diameter. You should end up with around 12 circles.

                    - Place the biscuit rounds on a greased baking sheet.

                      Bake the Biscuits:

                        - Bake the biscuits in the preheated oven for about 10-12 minutes, or until they are golden brown. Remove from the oven and allow them to cool slightly while you prepare the eggs.

                          Cook the Eggs:

                            - In a medium bowl, whisk the eggs, adding a pinch of salt and pepper.

                              - In a non-stick skillet over medium heat, scramble the eggs until fully cooked and fluffy, about 3-4 minutes. Remove from heat.

                                Assemble the Stacks:

                                  - Slice each biscuit in half horizontally.

                                    - Begin stacking by placing the bottom half of a biscuit on a plate, adding a generous scoop of scrambled eggs, a sprinkle of crumbled bacon, and a slice of cheese on top.

                                      - Add the top half of the biscuit to complete the stack.

                                        - Repeat this process for all biscuits.

                                          Serve and Enjoy:

                                            - Garnish each mini stack with chopped chives for added flavor and color.

                                              - Serve warm as a delightful breakfast or brunch treat!
