Mini Air Fryer Veggie Quesadilla Rolls

Ingredients
  

4 small whole wheat tortillas

1 cup shredded cheese (cheddar or pepper jack)

1/2 cup black beans, rinsed and drained

1/2 cup corn, frozen or canned

1/2 bell pepper, finely chopped (any color)

1/2 small red onion, finely chopped

1 small zucchini, grated

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper to taste

Olive oil spray (for air frying)

Optional: Fresh cilantro, sour cream, or salsa for serving

Instructions
 

Prep Your Veggies: In a mixing bowl, combine black beans, corn, chopped bell pepper, red onion, grated zucchini, ground cumin, garlic powder, chili powder, salt, and pepper. Mix until well blended.

    Assemble the Quesadilla Rolls: Place a tortilla on a flat surface. Sprinkle about 1/4 of the shredded cheese in the center. Add a generous portion of the veggie mixture on top of the cheese. Scatter another layer of cheese on top of the veggies, then roll the tortilla tightly like a burrito, sealing in the filling.

      Repeat: Repeat steps 1 and 2 with the remaining tortillas and filling until all are rolled up.

        Prepare the Air Fryer: Preheat your air fryer to 380°F (193°C). Lightly mist the outside of each quesadilla roll with olive oil spray to help them crisp up.

          Air Fry the Rolls: Place the quesadilla rolls in the air fryer basket, making sure to leave some space between each roll. Air fry for 8-10 minutes or until golden brown and crispy, shaking the basket halfway through to ensure even cooking.

            Serve and Enjoy: Once done, carefully remove the rolls from the air fryer. Let them cool for a minute before slicing them into bite-sized pieces. Serve with fresh cilantro, sour cream, or salsa for dipping.
