1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, finely chopped

1 bell pepper (red or yellow), diced

¼ cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup parsley, chopped

2 tablespoons fresh mint, chopped (optional)

Juice of 1 lemon

3 tablespoons extra-virgin olive oil

1 teaspoon dried oregano

Salt and pepper to taste

4 cups mixed greens or spinach (for serving)

Instructions
 

Prepare the Chickpeas: In a large bowl, combine the rinsed chickpeas, cherry tomatoes, cucumber, red onion, bell pepper, Kalamata olives, feta cheese, parsley, and mint.

    Make the Dressing: In a separate small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and pepper until well combined. Adjust seasoning to taste.
