1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

½ small red onion, finely chopped

1 cup Kalamata olives, pitted and sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

3 tbsp olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

1 avocado, diced (optional)

4 cups mixed greens (spinach, arugula, etc.)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, and Kalamata olives. Gently toss all the ingredients together with your hands or a spatula.

    Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well blended.

      Combine: Pour the dressing over the chickpea salad mixture and gently toss until all ingredients are evenly coated with the dressing.

        Add Fresh Herbs: Fold in the fresh parsley and mint, mixing until they are nicely distributed throughout the salad.
