For the salad:

1 can (15 oz) chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

1/4 red onion, finely chopped

1/2 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1 avocado, diced (optional)

For the dressing:

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 clove garlic, minced

Zest and juice of 1 lemon

Salt and pepper to taste

Prepare the salad base: In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, bell pepper, red onion, olives, feta cheese, parsley, and mint. If using avocado, gently fold it in last to avoid mashing.

    Make the dressing: In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, lemon zest, and lemon juice. Season with salt and pepper to taste. If using a jar, you can seal it and shake it well until combined.

      Combine: Drizzle the dressing over the salad mixture and gently toss to evenly coat all ingredients. Let the salad sit for about 10 minutes to allow the flavors to meld together.

        Serve: Divide the chickpea salad into bowls and enjoy it immediately, or refrigerate for up to 3 days for a make-ahead lunch or dinner option!
