Mediterranean Chickpea Salad Bowls

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red, yellow, or orange), diced

1 small red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Optional: 1 avocado, sliced

Optional: Pita bread or crackers for serving

Prepare the Chickpeas: In a large mixing bowl, add the drained and rinsed chickpeas. Gently mash some of the chickpeas with a fork to create a creamy texture, while leaving others whole for added crunch.
