2 medium acorn squash

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped pecans or walnuts (optional)

Fresh rosemary or thyme for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Acorn Squash: Carefully slice the acorn squash in half vertically. Remove the seeds and pulp with a spoon. Slice each half into 1/2-inch thick rings, discarding the ends.

      Make the Maple Mixture: In a small bowl, whisk together the maple syrup, olive oil, ground cinnamon, nutmeg, salt, and black pepper until well combined.

        Coat the Rings: Place the squash rings on the baking sheet. Brush both sides of each ring generously with the maple mixture. If desired, sprinkle chopped pecans or walnuts on top for added crunch.
