4 turkey legs

1/2 cup pure maple syrup

1/4 cup soy sauce

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 teaspoon ground black pepper

1 teaspoon salt

1/2 teaspoon smoked paprika

1 tablespoon olive oil

Fresh thyme sprigs for garnish (optional)

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Marinade: In a mixing bowl, whisk together the maple syrup, soy sauce, Dijon mustard, minced garlic, grated ginger, black pepper, salt, and smoked paprika until well combined.

      Marinate Turkey Legs: Place the turkey legs in a large resealable plastic bag or a shallow dish. Pour the marinade over the turkey legs, ensuring they are well-coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

        Sear Turkey Legs: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Remove the turkey legs from the marinade and reserve the marinade for later. Once the oil is hot, add the turkey legs and sear for 4-5 minutes on each side, until golden brown.

          Bake in the Oven: After searing, pour the reserved marinade over the turkey legs. Transfer the skillet to the preheated oven and roast for 45-55 minutes, or until the turkey legs reach an internal temperature of 165°F (74°C). Baste the legs with the marinade once or twice during cooking to enhance the flavor.

            Create Glaze: Once cooked, remove the turkey legs from the oven. If desired, transfer the skillet back to the stovetop over medium heat and bring the marinade to a gentle boil. Allow it to simmer for 5-7 minutes until it thickens slightly.
