2 ripe mangoes, peeled and diced

1 cup fresh lemon juice (about 4-5 lemons)

1 cup granulated sugar

1 cup water

1 tsp lime zest (optional)

Prepare the Simple Syrup: In a small saucepan, combine 1 cup of water and 1 cup of sugar. Heat over medium heat, stirring occasionally until the sugar completely dissolves. Once dissolved, remove from heat and let it cool to room temperature.

    Blend the Ingredients: In a blender, combine the diced mangoes, fresh lemon juice, cooled simple syrup, lime zest (if using), and a pinch of sea salt. Blend until the mixture is smooth and creamy.

      Strain (Optional): For a silkier texture, strain the mixture through a fine sieve into a large bowl to remove any fibrous bits from the mangoes. This step is optional based on your texture preference.

        Freeze the Mixture: Pour the mango-lemon mixture into a shallow baking dish. Place it in the freezer for about 2-3 hours, or until the edges start to freeze.
