Mango Glazed Turkey

1 whole turkey (12-14 lbs)

2 cups fresh mango puree (about 3 ripe mangoes)

1/2 cup honey

1/4 cup soy sauce

1/4 cup fresh lime juice

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon ground cumin

1 teaspoon ground coriander

Salt and pepper to taste

Olive oil for rubbing

Fresh cilantro for garnish

Prep the Turkey:

    Preheat your oven to 325°F (163°C). Rinse the turkey under cold water and pat it dry with paper towels. Remove any giblets and discard or save for another use.

      Season the Bird:

        Rub the outside of the turkey with olive oil and season generously with salt and pepper. This helps to create a delicious crispy skin.

          Make the Mango Glaze:

            In a medium saucepan over medium heat, combine the mango puree, honey, soy sauce, lime juice, garlic, ginger, cumin, and coriander. Stir well and bring the mixture to a simmer. Let it cook for about 10 minutes until slightly thickened and aromatic. Remove from heat and set aside.

              Glazing the Turkey:

                Place the turkey in a large roasting pan. Brush about half of the mango glaze over the turkey, making sure to cover all surfaces and inside the cavity.

                  Roast the Turkey:

                    Roast the turkey in the preheated oven, basting every 30 minutes with the remaining mango glaze. Continue until the turkey reaches an internal temperature of 165°F (74°C) in the thickest part of the thigh. Cooking time will be approximately 13-15 minutes per pound; a 12-14 lbs turkey typically takes 2.5 to 3.5 hours.

                      Rest and Garnish:

                        Once the turkey is done, remove it from the oven and let it rest for at least 20-30 minutes before carving. This allows the juices to redistribute. Garnish with fresh cilantro for a vibrant touch.

                          Serve:

                            Carve the turkey and serve with any remaining mango glaze on the side. Pair with your favorite sides for a festive meal.
