1 lb large shrimp, peeled and deveined

1 ripe mango, peeled and diced

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon fresh lime juice

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

1 tablespoon olive oil

½ teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh cilantro or parsley, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Mango Glaze: In a blender, combine the diced mango, soy sauce, honey, lime juice, ginger, garlic, and red pepper flakes (if using). Blend until smooth. Taste and season with salt and pepper as desired.

    Marinate the Shrimp: In a bowl, toss the shrimp with half of the mango glaze to coat. Allow them to marinate for about 15-20 minutes at room temperature.

      Cook the Shrimp: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side, or until they turn pink and opaque.

        Add the Remaining Glaze: Once the shrimp are nearly cooked, pour in the remaining mango glaze. Stir well to combine, and let it cook for an additional 1-2 minutes until the glaze thickens slightly.

          Serve: Remove from heat and garnish with fresh cilantro or parsley. Serve the mango glazed shrimp with lime wedges on the side for squeezing over the top.
