Luscious Blueberry Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon cinnamon (optional)

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

½ cup sour cream

Zest of 1 lemon

1 ½ cups fresh blueberries (you can also use frozen, just thaw and drain them)

For the blueberry topping:

1 cup fresh blueberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch mixed with 1 tablespoon water

Preheat Oven: Preheat your oven to 325°F (160°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon (if using). Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking pan, creating an even layer. Bake for 10-12 minutes until lightly golden. Remove from the oven and let cool.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add granulated sugar, continuing to mix until well incorporated. Add in the vanilla, eggs (one at a time), sour cream, and lemon zest. Mix until just combined. Gently fold in the fresh blueberries.

        Bake the Cheesecake: Pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula. Bake for 30-35 minutes, or until the edges are set but the center has a slight jiggle. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 30 minutes to help prevent cracking.

          Prepare the Blueberry Topping: In a small saucepan over medium heat, combine 1 cup of blueberries, sugar, and lemon juice. Cook until the berries start to burst and the sugar is dissolved, about 5 minutes. Stir in the cornstarch mixed with water and cook until the mixture thickens, about 2 minutes. Remove from heat and let cool.

            Assemble: Once the cheesecake has cooled, gently pour the blueberry topping over the cheesecake, spreading it evenly.

              Chill: Cover the pan and refrigerate for at least 4 hours, preferably overnight, to allow the cheesecake to set properly.

                Serve: When ready to serve, lift the cheesecake bars out of the pan using the parchment overhang. Cut into squares and enjoy your luscious blueberry cheesecake bars!
