1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

For the Cheesecake Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 ½ cups fresh blueberries (or frozen, thawed)

For the Blueberry Topping:

1 cup fresh blueberries

¼ cup granulated sugar

2 tablespoons lemon juice

1 tablespoon cornstarch

1 tablespoon water

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang to make removing the bars easier later.

    Make the Crust: In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Stir until well combined. Press the mixture firmly into the bottom of the lined baking pan to form an even layer. Bake for 8-10 minutes or until golden. Remove from the oven and let it cool slightly.

      Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the sugar, and mix until combined. Then, add the eggs one at a time, blending well after each addition. Stir in the vanilla extract and lemon juice until fully incorporated.

        Add Blueberries: Gently fold in the fresh blueberries into the cheesecake filling, being careful not to crush them.

          Bake the Cheesecake: Pour the cheesecake mixture over the cooled crust and spread it evenly. Bake in the preheated oven for 35-40 minutes, or until the edges are set and the center has a slight jiggle.
