Low-Carb Zucchini Lasagna Bake

3 medium zucchinis, sliced lengthwise into 1/4-inch thick strips

1 pound ground beef or turkey (or a plant-based alternative)

1 small onion, finely chopped

2 cloves garlic, minced

1 1/2 cups marinara sauce (sugar-free if possible)

1 cup ricotta cheese

1 egg

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Olive oil for cooking

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Salt the zucchini strips lightly and let them sit for about 15 minutes to draw out moisture. Pat them dry with paper towels.

      Cook the Meat: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and garlic; sauté for about 3 minutes until softened. Then, add the ground beef or turkey; season with salt, pepper, oregano, and basil. Cook until the meat is browned. Drain excess fat if necessary.

        Mix Ricotta Filling: In a medium bowl, combine the ricotta cheese, egg, and a pinch of salt and pepper. Mix until smooth and set aside.

          Layer the Lasagna: In a baking dish, spread a thin layer of marinara sauce on the bottom. Arrange a layer of zucchini slices over the sauce, followed by a layer of the meat mixture, then a layer of the ricotta mixture. Sprinkle with mozzarella cheese. Repeat these layers (zucchini, meat, ricotta, mozzarella) until all ingredients are used, finishing with a layer of marinara on top and a sprinkle of mozzarella and Parmesan cheese.

            Bake: Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.
