3 medium zucchinis, sliced lengthwise into thin strips

1 pound ground turkey or beef

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup marinara sauce (look for low-carb options)

1 teaspoon Italian seasoning

2 cloves garlic, minced

1 small onion, diced

Salt and pepper, to taste

1 tablespoon olive oil

Fresh basil, for garnish (optional)

1/4 cup grated Parmesan cheese

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Lightly sprinkle the zucchini slices with salt and let them sit in a colander for about 15 minutes to draw out excess moisture. Pat them dry with paper towels afterward.

    Cook the Meat: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes. Add the ground turkey or beef, breaking it apart with a spatula. Cook until browned and cooked through (approximately 7-10 minutes). Season with Italian seasoning, salt, and pepper to taste. Remove from heat.

      Layer the Lasagna: In a baking dish (approximately 9x13 inches), start layering.

        - First, spread a thin layer of marinara sauce on the bottom.

          - Next, layer half of the zucchini strips on top of the sauce, followed by half of the ricotta cheese spread evenly, half of the meat mixture, and a sprinkle of mozzarella cheese.

            - Repeat the layers with the remaining zucchini strips, marinara sauce, ricotta cheese, meat mixture, and finish with the remaining mozzarella and Parmesan cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and slightly golden.
