Low-Carb Zucchini Lasagna Bake

3 medium zucchinis, sliced into thin strips (lengthwise)

2 tablespoons olive oil

1 pound ground turkey or beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 jar (24 oz) marinara sauce (low-sugar)

1 1/2 cups ricotta cheese

1 large egg

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Prep the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick. Sprinkle with salt and lay them on paper towels to drain excess moisture for about 20 minutes.

    Cook the Meat: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic, ground turkey or beef, oregano, basil, red pepper flakes (if using), and season with salt and pepper. Cook until the meat is browned, breaking it apart as it cooks (about 7-10 minutes).

      Add Marinara: Once the meat is browned, pour in the marinara sauce and simmer for about 5 minutes, allowing the flavors to meld together. Remove from heat.

        Mix the Cheese Filling: In a mixing bowl, combine ricotta cheese, the large egg, 1 cup of mozzarella cheese, and half of the Parmesan cheese. Season with salt and pepper, and mix until well combined.

          Assemble the Lasagna: In a 9x13 inch baking dish, spread a thin layer of meat sauce on the bottom. Layer zucchini strips over the meat sauce, followed by half of the ricotta mixture. Repeat the layers with more meat sauce, zucchini, and ricotta mixture. Finish with a final layer of zucchini, remaining meat sauce, 1/2 cup of mozzarella, and the rest of the Parmesan cheese on top.

            Bake: Cover the dish with aluminum foil (to prevent browning) and bake in the preheated oven for 25 minutes. Remove the foil and continue baking for an additional 15-20 minutes, or until the cheese is bubbly and golden.

              Let Cool and Serve: Once baked, remove from the oven and let the lasagna cool for about 10 minutes - this will help it set. Garnish with fresh basil or parsley, if desired. Slice, serve, and enjoy your low-carb zucchini lasagna bake!
