Low-Carb Zucchini Lasagna Bake

4 medium zucchinis (sliced into thin planks)

1 pound ground turkey or beef

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup marinara sauce (low sugar)

1/4 cup grated Parmesan cheese

1 large egg

2 teaspoons Italian seasoning

2 cloves garlic (minced)

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Slice the zucchinis lengthwise into thin planks. If you prefer, sprinkle them lightly with salt and let them sit for about 10 minutes to draw out excess moisture. Pat them dry with paper towels before using.

      Cook the Meat: In a large skillet over medium heat, add the ground turkey or beef. Cook, breaking it apart with a spoon, until browned (about 5-7 minutes). Drain excess fat if necessary. Add the minced garlic and Italian seasoning. Cook for an additional 1-2 minutes, then stir in the marinara sauce. Season with salt and pepper to taste. Remove from heat.

        Prepare Ricotta Mixture: In a medium bowl, mix the ricotta cheese, egg, and Parmesan cheese until well combined. Season with a pinch of salt and pepper.

          Assemble the Lasagna: In a greased 9x13 inch baking dish, spread a thin layer of the meat sauce at the bottom. Layer with zucchini planks, followed by a layer of the ricotta mixture, then a layer of mozzarella cheese. Repeat these layers until all ingredients are used, finishing with a layer of sauce and topped with the remaining mozzarella cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Let It Rest: Once out of the oven, let the lasagna rest for about 10 minutes before slicing. This allows the layers to set nicely.

                Serve: Garnish with fresh basil if desired, and enjoy your delicious, low-carb zucchini lasagna!
