3 medium zucchinis, sliced thinly lengthwise

1 pound ground turkey or beef

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) crushed tomatoes

1 can (15 oz) tomato sauce

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon salt

½ teaspoon black pepper

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 egg

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Place the zucchini slices on a clean kitchen towel. Sprinkle with salt and let them sit for about 15 minutes to draw out excess moisture. Pat them dry with another towel.

      Cook the Meat: In a large skillet over medium heat, add the diced onion and garlic. Sauté for about 2-3 minutes until fragrant and translucent. Add the ground turkey or beef and cook until browned, breaking it up with a spatula. Drain any excess fat.

        Add Sauces: Stir in the crushed tomatoes, tomato sauce, oregano, basil, salt, and pepper. Let it simmer for about 10 minutes to combine the flavors.

          Mix the Cheese Filling: In a bowl, combine the ricotta cheese, half of the mozzarella cheese, Parmesan cheese, and the egg. Mix until well combined.

            Layer the Lasagna: In a 9x13 inch baking dish, spread a thin layer of the meat sauce at the bottom. Layer half of the zucchini slices over the sauce. Spread half of the cheese mixture over the zucchini, followed by another layer of meat sauce. Repeat the layers once more—zucchini, cheese mixture, and meat sauce.

              Top it Off: Finish with the remaining mozzarella cheese on top.

                Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

                  Cool and Serve: Let the lasagna sit for about 10 minutes before slicing. Garnish with fresh basil leaves if desired and serve warm.
