Low-Carb Zucchini Lasagna Bake

3 medium zucchini, sliced lengthwise into thin sheets

1 lb ground turkey or beef

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups marinara sauce (preferably low-sugar)

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

1 tablespoon olive oil

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini Sheets: Slice the zucchini lengthwise into thin strips using a mandoline or sharp knife. Place the slices in a colander, sprinkle with salt, and let them sit for about 15-20 minutes to draw out moisture. Pat them dry with paper towels.

      Cook the Meat: In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the ground turkey or beef, cooking until browned. Drain any excess fat and season with oregano, basil, salt, and pepper.

        Mix the Cheese Filling: In a bowl, combine the ricotta cheese, egg, 1 cup of mozzarella cheese, and a pinch of salt and pepper. Mix until well blended.

          Layer the Lasagna: In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Place a layer of zucchini slices over the sauce. Then, add half of the meat mixture followed by half of the ricotta mixture. Repeat the layering process with another layer of zucchini, marinara sauce, meat, and ricotta. Finish with the last layer of zucchini, marinara sauce, and top with the remaining mozzarella and Parmesan cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.

              Let it Rest: Remove from the oven and let the lasagna rest for about 10 minutes before slicing. This helps the layers set and makes serving easier.
